Many Tiki Mixers are easy to create at home without the artificial colors and flavors of commercial mixers. Here are three that can be made with commonly available ingredients. For more mixer recipes see "What the heck is Falernum?" and "Hibiscus grenadine."
Pimento (Allspice) Dram:
- 12 oz rum
- 1/2 cup allspice berries
- 1 teaspoon cinnamon chips (broken cinnamon sticks)
- 1 cup water
- 1 cup brown sugar
Steep allspice berries in rum for 5 days. Add the cinnamon and steep for an additional 5 to 10 days. Strain through a mesh strainer lined with a paper coffee filter. Heat water and sugar in a small sauce pan until the sugar dissolves. Cool and add to infused rum. Store at room temperature up to 3 months.
Cinnamon and vanilla syrups:
-
1.5 tablespoons cinnamon chips
OR
2 vanilla beans - 1 cup water
- 1 cup sugar
Place cinnamon or vanilla in a small saucepan with sugar and water. Bring to a boil, then simmer for two minutes; stirring to dissolve the sugar. Remove from heat, cover, and let sit for two hours. Strain out the cinnamon or vanilla and refrigerate. Use or freeze within two weeks.
